Our story is pretty epic! ‘Jimmy’ (Jim Hartman) was the visionary and creator of the Jimmy Hula’s concept. Back in the old days, Jimmy spent many years in the fast food franchise business… In fact, he was one of the largest fast food franchisees in the state of Florida!
During his free time, Jimmy loved to travel with his family. Most of the time they would choose to visit far off and adventurous destinations. They focused on areas of the globe that provided the best beaches along with unique culture. Jimmy loved the adventure! During these travels, Jimmy always found himself spending time hanging with the ‘Locals’, delving into their culture, exploring local eateries and partaking in their most desirable grub. The cultures and food (obviously food in particular) always left a great impression on him.
As he would travel home to California, the wheels were constantly turning on how to get these worldly flavors back to his local eateries. This vision kept with him for many years. He decided to make a power move! To sell his fast food joints, breakaway from the over saturated brands that didn’t focus on what mattered to him – the freshest most vibrant ingredients, the most sustainable products and a killer beach style atmosphere. He wanted to use those guidelines as the basis to create Food Nirvana!
He gathered the help of this son, Zach, who had a passion for food and business. Together they worked and put Jimmy’s experiences, travels and philosophy together to create a new and exciting fast casual concept. Zach focused on creating a menu that was unique and flavorful, a menu that would combine flavors, ingredients and value oriented foods. The final product was Food Nirvana! They pondered on the best atmosphere to provide these great eats in… and settled on the idea of a beach style surf shack, with reclaimed wood features, large spacious outdoor dining and random relics of Jimmy’s travels.
When all was said and done, their first food shack, Jimmy Hula’s Fish Tacos, Burgers & Beer, opened in Winter Park Florida in March of 2011. Zach was local to Winter Park, and raised there, so he engaged fully in the day to day operations. For Zach, the business was an easy transition from his schooling, especially having had restaurant operations in the family and a foodie upbringing. It was a dream come to true!
